Somehow we are zipping toward the middle of October. I'm already working on my holiday timeline for gifts, meal plans, and decluttering decorations. Fall is really in the air despite the warmer days we've had lately. My fingers are loving all the wool projects I have on the needles and all I really want is more free time to accomplish them! I survived all my wedding related knitting. I didn't finish my own Luna Capelet, but I did get the bride and flower girl's garments complete. For those of you interested in seeing the end result, stop by yarn-love and see the Tiny Tea Leaves sample knit in Dream in Color's new Fire Scorched Lime . My little girl is still too small for it, but it worked great for the morning and even kept her dress cleaned while she played and snacked. One more knitting note, that child's cardigan knit up fast. Really fast. I completed everything but the sleeves in a weekend. So if you need a quick projects, definitely consider.
Since we've been running around lately, I found this Spinach Burrito recipe and knew it would be the perfect warm but easy dish to serve. To up the protein I added a can of chickpeas (garbanzo beans) to the spinach mixture. I made sure to rinse them and then lightly smooshed them as they warmed in the skillet. And if that wasn't easy enough, I had some of the spinach mixture left over and made a small frittata for breakfast. Yummy! Since the fall greens are starting to arrive at the farmer's markets, grocery stores, and in my CSA, I think one could easily substitute or add to the spinach with kale. I would simply add it to the onion, butter and garlic mix to wilt down. And if you still have fresh tomatoes, a homemade salsa would take this recipe up another notch.
